Smoked Salmon Cucumber Bites

These Smoked Salmon Cucumber Bites are a refreshing and elegant appetizer perfect for any gathering. They are easy to make and offer a burst of fresh flavor.

Ingredients
  

For the Smoked Salmon Mousse
  • 150 g smoked salmon or smoked trout
  • 150 g cream cheese softened
  • 2 tbsp sour cream omit if using spreadable cream cheese
  • 2 tbsp mayonnaise
  • 1/3 cup fresh dill roughly chopped, or chives
  • 1 garlic clove minced
  • 2 tsp lemon zest from 1 lemon
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Cucumber
  • 3 long cucumbers or 6 standard cucumbers
For Garnish
  • extra dill sprigs
  • lemon slices for serving

Equipment

  • Food processor
  • Piping bag
  • Star tip nozzle
  • Melon baller
  • Teaspoon

Method
 

  1. Place all ingredients for the smoked salmon mousse in a food processor. Process until completely smooth, scraping down the sides as needed.
  2. Fit a piping bag with a wide star tip nozzle (1.5-2cm / 0.6 - 0.75" wide). Transfer the mousse into the piping bag. Refrigerate for at least 5 hours, or until firm.
  3. Cut the cucumbers into 1.5cm (0.6") thick slices.
  4. Use a small melon baller or teaspoon to scoop a well out of the center of each cucumber slice.
  5. Pipe the chilled mousse into the wells of the cucumber slices. Top each bite with an extra dill sprig and serve immediately with lemon slices.

Notes

The long cucumbers are less watery and prevent the mousse from being diluted. If using standard cucumbers, you can make the slices slightly thinner. The mousse can be prepared up to 3 days in advance and stored in the piping bag in the refrigerator. Cut and prepare the cucumber just before assembling. Assembled bites will start to sweat after 30-45 minutes, but they remain delicious.
