Ingredients
  

For the Wraps
  • 1 pound grilled chicken breast cut into strips
  • 6 whole wheat tortillas
  • as needed Romaine lettuce leaves
  • 15 ounces black beans one can, drained and rinsed
  • 8 ounces corn one can, drained well
  • 3/4 cup pico de gallo
  • 1 cup shredded cheddar cheese lite or fat free
  • 1/3 cup mayonnaise lite

Method
 

  1. Cut the grilled chicken into strips.
  2. Lay a tortilla on a clean chopping board. Add one or two lettuce leaves, 2 tablespoons black beans, 1 tablespoon corn, 2 tablespoons pico de gallo, and top with some chicken.
  3. Drizzle with a spoonful of mayonnaise and sprinkle with shredded cheddar.
  4. Roll it up, neat and tight, then repeat with the remaining tortillas.
  5. Just before serving, cut the tortillas in half and enjoy!

Notes

You can use lite mayonnaise or Miracle Whip. Greek yogurt can be used in place of mayonnaise. Use carb or whole wheat tortilla wraps. Use canned corn, or boil your own fresh corn. Use the shredded cheese of your choice; fat-free versions are available. Instead of mayonnaise or yogurt, you can use southwest dressing.
