Spicy Buffalo Chicken Wraps for Two

Ingredients
  

For the Buffalo Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup Buffalo wing sauce your favorite brand
  • 2 tablespoons unsalted butter melted
For the Wraps
  • 2 large flour tortillas or your favorite wraps
  • 1/2 cup shredded lettuce
  • 1/4 cup crumbled blue cheese optional
  • 1/4 cup diced celery
  • 2 tablespoons ranch dressing for drizzling

Method
 

  1. In a medium bowl, combine the chicken pieces, Buffalo wing sauce, and melted butter. Toss to coat evenly. Let it marinate for at least 10 minutes while you prepare the other ingredients.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until the chicken is cooked through and no longer pink, about 8-10 minutes.
  3. Warm the tortillas according to package directions. This makes them more pliable and easier to wrap.
  4. Assemble the wraps: Lay a warm tortilla flat. Spoon the cooked Buffalo chicken mixture down the center. Top with shredded lettuce, crumbled blue cheese (if using), and diced celery.
  5. Drizzle with ranch dressing. Fold in the sides of the tortilla, then tightly roll it up from the bottom to create your wrap.
  6. Serve immediately and enjoy your spicy and satisfying meal for two!

Notes

For an extra kick, add a pinch of cayenne pepper to the chicken mixture. You can also add other favorite wrap fillings like diced tomatoes or red onion.
