Strawberry Icebox Cake

Ingredients
  

For the Cake
  • 1 package graham crackers about 21 crackers
For the Filling
  • 2 cups heavy cream cold
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pound strawberries hulled and sliced

Equipment

  • 9x13-inch baking dish
  • Electric mixer
  • Spatula

Method
 

  1. Line the bottom of a 9x13 inch baking dish with graham crackers, breaking them as needed to fit.
  2. In a large bowl, beat the cold heavy cream with an electric mixer until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Arrange half of the sliced strawberries over the whipped cream.
  6. Repeat the layers: add another layer of graham crackers, the remaining whipped cream, and the remaining strawberries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
  8. Slice and serve chilled.

Notes

For a richer flavor, you can add a layer of cream cheese to the whipped cream mixture. Ensure your heavy cream is very cold for best whipping results.
