Ingredients
  

Salad
  • 5 oz fresh spinach washed and dried
  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pecans chopped and toasted
  • 2 oz feta cheese crumbled
Dressing
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

  1. In a large bowl, combine the spinach, sliced strawberries, red onion, and toasted pecans.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard. Season with salt and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Sprinkle the crumbled feta cheese over the top before serving.

Notes

You can substitute walnuts for pecans if desired. For a heartier salad, add grilled chicken or shrimp.
