Summer Salad with Grilled Corn and Avocado Lime Dressing

Ingredients
  

For the Salad
  • 4 ears Corn Husked
  • 1 can Black beans 15 oz, rinsed and drained
  • 1 pint Cherry tomatoes Halved
  • 1/2 cup Cilantro Chopped
For the Dressing
  • 2 Avocados Pitted and peeled
  • 1/4 cup Lime juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1/4 cup Olive oil Extra virgin
  • 1/4 cup Water Or more, to reach desired consistency
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn, turning occasionally, until lightly charred and tender, about 8-10 minutes. Let cool slightly, then cut the kernels off the cobs.
  3. In a large bowl, combine the grilled corn kernels, black beans, cherry tomatoes, red onion, and cilantro.
  4. To make the dressing, combine the avocados, lime juice, minced garlic, olive oil, water, salt, and pepper in a blender. Blend until smooth and creamy. Add more water if needed to reach your desired consistency.
  5. Pour the dressing over the salad ingredients and toss gently to combine.
  6. Serve immediately.

Notes

You can add grilled chicken or shrimp for a more substantial meal. This salad is also delicious with a sprinkle of cotija cheese.
