- In a large skillet over medium heat, heat oil. Season chicken with salt and pepper.
- Cook chicken, stirring occasionally, until golden brown, about 6 minutes.
- Add chili powder, cumin, garlic powder, cayenne, and paprika. Cook, stirring and adding more oil if mixture is too dry, until coated, about 1 minute more.
- Divide chicken among tortillas, then top with desired toppings.
Notes
This recipe is a great base for meal prep. You can prepare the chicken ahead of time and store it in an airtight container in the refrigerator for up to 3 days. Warm the tortillas just before serving.
