Dressing
  • 1/4 cup white balsamic vinegar or white wine vinegar or red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons pure maple syrup or honey
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon salt

Method
 

  1. Lightly toss all the salad ingredients together in a bowl. Make sure the mandarin oranges are dried well.
  2. Whisk or blend the salad dressing ingredients together until well-combined.
  3. Drizzle the salad dressing over the entire salad and toss to combine, or serve the dressing on the side for individual servings.

Notes

For the mandarin oranges, you can slice and segment 2-3 small fresh mandarin oranges instead of using canned. Crumbling feta cheese from the block provides a creamier texture than pre-crumbled feta. The candied pecans can be made a couple weeks in advance and stored in a tightly covered container. White balsamic or white wine vinegar are preferred for the dressing, but red wine vinegar also works.
