- Toast the English muffin halves in a toaster.
- Heat olive oil or butter in a skillet over medium heat.
- Crack the eggs into the skillet. Cook them to your desired doneness. You can cook them sunny-side up, over-easy, or scramble them.
- Add the ham slices to the skillet and warm them through.
- Place the shredded cheese and chopped chives over the eggs and ham. Cover the skillet for about 30 seconds to allow the cheese to melt.
- Season with salt and pepper to taste.
- Assemble the sandwich by placing the egg, ham, and cheese mixture onto one half of the toasted English muffin, then topping with the other half.
Notes
To make two sandwiches at once, toast the English muffins separately and sauté two sets of eggs in the pan simultaneously. This recipe is a great base for customization; feel free to add other ingredients like avocado or different types of cheese.
