- In a small bowl, combine the shredded manchego cheese, onion powder, brie cheese, sharp white cheddar, Monterey jack, and gruyere. Mix well.
- Spread mayonnaise evenly on one side of each slice of sourdough bread.
- Heat 3 tablespoons of butter in a large skillet or griddle over medium heat.
- Place two slices of bread, mayonnaise-side down, in the skillet. Spoon the cheese mixture evenly onto the bread slices.
- Top with the remaining two slices of bread, mayonnaise-side up.
- Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Add the remaining 3 tablespoons of butter to the skillet if needed for the second side.
- Slice the grilled cheese sandwiches in half and serve immediately.
