For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter, softened divided
  • 3 tablespoons mayonnaise
  • 3 tablespoons manchego cheese finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese rind removed
  • 1/2 cup sharp white cheddar cheese shredded
  • 1/2 cup Monterey jack cheese shredded
  • 1/2 cup gruyere cheese shredded

Method
 

  1. In a small bowl, combine the shredded manchego cheese, onion powder, brie cheese, sharp white cheddar, Monterey jack, and gruyere. Mix well.
  2. Spread mayonnaise evenly on one side of each slice of sourdough bread.
  3. Heat 3 tablespoons of butter in a large skillet or griddle over medium heat.
  4. Place two slices of bread, mayonnaise-side down, in the skillet. Spoon the cheese mixture evenly onto the bread slices.
  5. Top with the remaining two slices of bread, mayonnaise-side up.
  6. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Add the remaining 3 tablespoons of butter to the skillet if needed for the second side.
  7. Slice the grilled cheese sandwiches in half and serve immediately.
