Ingredients
  

For the Tots
  • 10 oz frozen cauliflower rice cooked until moisture has evaporated
  • 1 cup cottage cheese 4% milkfat or full-fat, blended until smooth
  • 1/4 cup shredded mozzarella cheese packed
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat a non-stick skillet over medium heat. Add the frozen cauliflower rice to the dry skillet. Stir occasionally and cook until most of the moisture has evaporated and the cauliflower rice is fluffy. Set aside.
  3. While the cauliflower rice is cooking, place the cottage cheese in a blender or food processor and blend until smooth and creamy.
  4. In a large bowl, combine the cooked cauliflower rice, blended cottage cheese, mozzarella cheese, parmesan cheese, garlic powder, and salt. Mix well.
  5. Scoop about 1 tablespoon of the cauliflower mixture and shape it into a tater tot. Place each tot on the prepared baking sheet, leaving about ½ inch between them.
  6. Bake for 27-30 minutes, or until golden brown. Remove from the oven and let cool for a few minutes before serving.
