- In a blender, combine the cubed watermelon, chia seeds, and coconut milk. Blend until smooth.
- Pour the mixture into a bowl, cover, and refrigerate for at least 10 minutes, or until thickened.
- Prepare your fruit layers by dicing the mango and cantaloupe, and ensuring your berries are ready.
- To assemble the parfaits, spoon a layer of the thickened watermelon chia pudding into the bottom of each serving glass.
- Add a layer of mixed berries, followed by another layer of watermelon chia pudding.
- Top with diced mango and cantaloupe. Repeat layers if desired.
- Serve immediately or chill until ready to enjoy.
Notes
You can adjust the sweetness by adding a touch of honey or maple syrup to the chia pudding mixture if desired. Feel free to use any combination of fruits you prefer for the layers.
