Watermelon Chia Parfaits

Ingredients
  

For the Watermelon Chia Pudding
  • 2 cups Seedless watermelon cubed
  • 1/4 cup Chia seeds
  • 1/4 cup Coconut milk unsweetened
For the Fruit Layers
  • 1 cup Mixed berries fresh or frozen
  • 1 cup Diced mango
  • 1/2 cup Diced cantaloupe

  • Small bowls
  • Serving glasses

Method
 

  1. In a blender, combine the cubed watermelon, chia seeds, and coconut milk. Blend until smooth.
  2. Pour the mixture into a bowl, cover, and refrigerate for at least 10 minutes, or until thickened.
  3. Prepare your fruit layers by dicing the mango and cantaloupe, and ensuring your berries are ready.
  4. To assemble the parfaits, spoon a layer of the thickened watermelon chia pudding into the bottom of each serving glass.
  5. Add a layer of mixed berries, followed by another layer of watermelon chia pudding.
  6. Top with diced mango and cantaloupe. Repeat layers if desired.
  7. Serve immediately or chill until ready to enjoy.

Notes

You can adjust the sweetness by adding a touch of honey or maple syrup to the chia pudding mixture if desired. Feel free to use any combination of fruits you prefer for the layers.
