Watermelon Coconut Lime Popsicles

Ingredients
  

For the Popsicles
  • 4 cups seedless watermelon cubed
  • 1 can full-fat coconut milk 13.5 oz
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons honey or maple syrup optional, adjust to taste

Equipment

  • Popsicle molds

Method
 

  1. Combine the cubed watermelon, coconut milk, lime juice, and optional sweetener in a blender. Blend until smooth.
  2. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  3. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  4. To unmold, run the popsicle molds under warm water for a few seconds.

Notes

You can add a few small pieces of watermelon to the molds before pouring the mixture for added texture. If you don't have popsicle molds, you can use small paper cups and freeze them with plastic wrap over the top, inserting a stick through the plastic wrap.
