- Preheat oven to 350°F (175°C). Grease and flour a 10-inch fluted or plain tube pan.
- In a large bowl, cream the butter and sugar until light and fluffy, about 5-7 minutes. Add the eggs one at a time, beating well after each addition. Beat in the lemon juice and vanilla extract. Add the flour alternately with the 7UP soda, beating well after each addition.
- Transfer the batter to the prepared pan. Bake until a toothpick inserted in the center comes out clean, 65-75 minutes. Cool in the pan for 20 minutes before removing to a wire rack to cool completely.
- For the glaze, in a small bowl, mix the confectioners' sugar, lemon juice, and enough 7UP soda to reach your desired consistency. If desired, stir in the zest. Drizzle over the cake.
