- Spread 3 tablespoons butter on 1 side of the bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, about 2-3 minutes. Remove the bread from the skillet.
- In a small bowl, mix together the mayonnaise, Manchego cheese, onion powder, and the remaining 3 tablespoons of butter. In another bowl, combine the cheddar, Monterey Jack, and Gruyere cheeses.
- To assemble the sandwiches, place the sliced Brie cheese on the toasted side of 4 bread slices. Sprinkle the cheddar cheese mixture evenly over the Brie.
- Top with the remaining 4 bread slices, ensuring the toasted side faces inward. Spread the mayonnaise mixture on the outsides of each sandwich.
- Place the assembled sandwiches in the same skillet. Cook until the bread is golden brown and the cheese is melted, about 5-6 minutes on each side. Serve immediately.
