- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add the garlic, thyme, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add the cannellini beans and kale. Cook until the kale is tender, about 10-15 minutes.
- Stir in the lemon juice. Season with salt and black pepper to taste.
- Serve hot.
Notes
For a creamier soup, you can blend a portion of the soup before adding the kale.
